Papaya Salsa
Papayas are nutritional powerhouses.
1 papaya, diced
1 red bell pepper, diced
1/4 red onion, minced
3 or 4 tablespoons chopped cilantro leaves
3 teaspoons lime juice
Directions:
Slice the papaya open.
In a large bowl, toss the diced papaya with the diced red bell pepper, minced red onion, chopped cilantro leaves, and lime juice. Enjoy!

I love papaya salsa. I have always made mine with some tomato and jalapenos in it. Yours sounds delicious and I am going to try this but with roasted red peppers!
ReplyDeletethis stuff ROCKS!!! good on chicken, white fish, salmon ;-)... and ..? Or just good with chips! NO OIL in this fresh recipe - ie very very low fat :-)
